Ive heard its bad for the fish if you rub its slime coating off but i was wondering if fish can produce more slime over time if some is rubbed off.

They will replace it, but they are vulnerable to many types of bacteria and fungus where their slime coat has been removed. Try not to handle the fish any more than necessary and keep your hands wet.. If you lay the fish down in the boat or on shore, use a piece of smooth  ( like a tarp) plastic so the fish can stay wet and protect it's slime coat.

Also be aware that certain kinds of nets can also cause a problem, I think most of the newer nets have a softer mesh or rubberized mesh but still try to keep the fish in the water and handle as little as possible with the above suggestions.

You're right Brian, I forgot to mention the net. Also, boat carpet is about as bad as it gets for removing a fish's slime coat. Do not allow a fish to flop on or lay a fish on boat carpet.

And kissing a fish?!?!? You can pick up a very nasty bacteria doing this. You don't want the intestinal cramps and sickness that goes along with it. DO NOT KISS FISH!!!!!!!

And catfish. Smooth skinned fishes are even more suseptable to bacterial infections on their skin as they don't have scales for protection.
