I have a trick for runnin crawfish. I have used it for years at seghis and in the wild for catfish. You can sub the trebble hook for a single hook. I use this for catfish and carp , you can modify it to suit your needs. Catfish/carp , They love these things. I have a neat LiL trick for ya. As they Mostly feed off the bottom , they love these little guys. I Almost 90% of the time use a Trebble Hook for this , but for Instruction Purposes I did this one with a Gammakatsu 3/0 Circle Hook. You will need: Trebble Hook ( I prefer Eagle Claw Red # 3 ) An 8" to 10" leeder Line ( I use Eagle Claw Mono ) A Darning Needle ( Baiting Needele ) And A swivel ( I use Eagle Claw #12 ) Next , Take the leeder Line And Connect it to the hook. Once You have done so , Thread the Crawfish Onto the Baiting/Darning Needle Like so. Then Take the Line , make a Small Loop. Then Snare it with the Hook on the needle Like So and Once you have done so it should Look some what Like this. Now remember Just For instructionial Purposes did I use the circle hook , as this is much easier to do with a trebble hook. Now in this Picture is the final product Minus the trebble hook of course.I then take the Swivel and tie it onto the leeder line. I then Run a Beed and a slip sinker ( Egg , Flat(No Roll) ) Or I use a sinker Slider with a Pyriamid Sinker. I have alos used a slip Float to fish this off the bottom when In Early march.

Good instructions Eric....it wouldn't surprise me if this wouldn't work for Smallmouths.

Or for that matter....a plastic crawfish that has some serious scent to it

Great info Eric I have alot of nice size channel cats in my pond down here in south east florida, I just started fishing for cats, but I can never seem to catch them. The only one I did catch I was bass fishing and got him on a spinner bait I guess it must have landed right on top of him.  I cant wait to try your method good stuff!
