Hey Fred, I like to deep fry them in beer batter!
Perch fillets
flour
all in one pancake mix
beer or soda water
vegi oil, peanut oil or olive oil (not x-tra virgin)
* clean fillets, pat dry
* roll in plain flour, shaking off excess
* mix pancake mix & liquid until it is thin enough to coat the fillets without having to much...
* dip fillet in this mixture, coating completely, and put into hot oil (350*) and cook until done, turning if necessary
* remove fish from oil and place on paper towel until cool enough to eat. Enjoy!
You do not need eggs for this as the plain flour will help the pancake mix stick to the fish.
