    I like to use a pinch of:

    • Montreal Steak season
    • Nature's season
    • Lawry's Season salt
    • Accent season

    You can sprinkle it on one side and then the other. I mostly use it on steaks but tried it once and wow it was something you should try.I'm more heavy on the ACCENT, but not to much, it wakes it up some. Not ment for catfish though, but you can try it if you want. I like to fry my catfish

    Al’s Low Fat Universal Breading Recipe This recipe was designed around multiple choices for breading, not only for fish but your other favorite meats. Baking is recommended but pan frying is a favorite choice and is well suited for all combinations. Breading – #1 Straight bread crumbs, #2 straight corn flake crumbs, #3straight corn meal, #4 flour & corn meal mixed in equal parts, #5 flour, corn meal & bread crumbs in equal parts, #6 Panko Japanese bread crumbs, #7 flour, corn meal, bread crumbs & corn flake crumbs in equal parts. Dip Mix - #1 Milk, #2 milk & one egg, #3 two eggs, #4 milk, one egg, sesame oil & soy sauce, #5 two eggs, sesame oil & soy Sauce Also, you can add any hot sauce to the dip mixes to spice up the dip mix. Directions – You can use any of the breading and dip mixes in any combination you desire. First dip the fish or other meat in straight flour. Then put in the chosen dip mix and coat. Place in desired breading mix and coat thoroughly. Have a flat Pyrex pan, cookie sheet, cast iron griddle or large ovenware pan ready and spray with Pam or equivalent. Place breaded fish or other meat in pan and spray with Pam. Season to your liking with any of the following: Salt, pepper, onion powder, garlic powder, ginger, lemon pepper, paprika, barbecue seasoning, seasoning salt & any of your other favorite seasonings. Bake in the oven at 400-450 degrees. Turn the fish or other meat over once. Cook until golden brown. Be careful not to over cook, or the fish will be too dry!
