HOWARD’S PICKLED FISH
1 CUP WATER
2 CUPS VINEGAR
3/4 CUP SUGAR
1 TSP PICKLING SPICE
1 CUP MUSCATEL WINE
SOAK FISH 24 HOURS IN SALTY WATER. SALTY ENOUGH TO FLOAT AN EGG. RINSE FISH IN COLD WATER, THEN COVER FISH WITH VINEGAR AND SOAK FOR 24 HOURS. DRAIN. MIX THE WATER, VINEGAR, SUGAR & PICKLING SPICE AND BRING TO BOIL FOR 5 MINUTES. COOL AND ADD WINE. POUR MIXTURE OVER FISH. PUT IN COVER DISH AND REFRIGERATE 3-4 DAYS AND THEN PUT INTO JARS AND REFRIGERATE. YOU CAN ADD ONIONS IN THE JAR WHICH IS OPTIONAL
