    1/2 doz. eggs 1/2 tsp. salt 2 doz. ramps 1/4 c. bacon drippings Clean and cut up ramps, using 1/2 of the stems. Place bacon drippings in iron skillet; heat to sizzling. Put in ramps and salt; fry until tender. Scramble eggs; pour over ramps and stir until eggs are done. Serve with crisp bacon and cornbread. Wild leeks , Round here we love em'. Course when you eat them you tend to smell like bad feet

    Morning Eric!  I have to join Brian,  What in the world is "ramps"?  But anything with bacon drippings in it has to be good!  Have a great day!  Uncle Tom
    I built my own lure company as a young man--thus the name UncleTomsJigs. It grew so well I decided to give it up and go fishing with family, friends and especially grand children. I became disabled as a United Methodist Pastor IN 2002 and retired here in Coastal Georgia on a 10 acre lake where I continue to fish despite my disabilities. My wonderful wife and I enjoy fishing together. God has blessed us in so many ways and we pray the same for you. I am excited about having so many new friends all over this great country.

    That recipe brings back boy-hood memories.... if you want to RAMP  it up even more try adding wild asparagus and morel mushrooms

    ( 1/2 cup ) wild asparagus spears, trimmed, cut diagonally into 1/2-inch pieces
    ( 1/2 cup) fresh morel mushrooms, thinly sliced lengthwise

    Gosh you learn something new every day. I have not had too much experience with leaks but rod tenders additions i can handle. I agree with uncle Tom, bacon goes good with just about anything.

    Brian they grow wild here in the hills of West Virginia, as a matter of fact I have a few recipes for them. I speak for myself, tween RHUBARB, Tomatoes, Ramps and peppers its perty much our staples here. I have a good many recipes on my forum, but you have to be a member to view them ( membership is free ).

    By the way, here's a quick helpful tip on ramps.


    Cut cleaned ramps in one-inch pieces.
    Parboil in plain water.
    While ramps are boiling, fry bacon in large iron skillet to point just before they become crisp.
    Cut bacon in pieces.
    Drain parboiled ramps and place in hot bacon fat.
    Season with salt and pepper to taste; fry until done.
    Serve garnished with boiled eggs, sliced.

    Ramps are often cooked without boiling.

    Some cooks break eggs over ramps during final seconds of cooking and stir lightly. Remove when eggs are done. Serve.

    I have no clue where I would get any leeks. Would green onions be a passable substitute? Tom

    Tom, you being mid west in all you should be able to get leeks. next time your in your local grocery store just ask your produce guy.

    My problem is that I am rarely allowed in the grocery store, I come home with too much "extra stuff" in the wife's words. ( She won't let me near a home improvement store unescorted either) I'll make a point of going with her next trip and take a look. Tom

    Hi Eric. I have never prepared leeks before. how would I prepare them to go into this recipe? I see them in the grocery store whole, looking like giant onions. Do you just chop them up or is there certain parts to use?
