    What follows is not exactly e recipe as i have not written anything down and you can improvise. 

    Stuffed green Chili's

    Start out by buying or growing 4 to 6 large aneheim chilis or poblano's ( the aneheim's seem a bit sweeter but alot depends on the chili and how much seeds and ribbing you remove.

    Roast the chili's underneath you broiler setting in the oven or do on a BBQ grill unitl the skin turns black and starts to bubble, turn frequently to make sure whole pepper is black.

    after they cool peel of all the balck charred skin, cut off top stem and pull out seed pods. slice down the side to prepair for stuffing(you can get more seeds out now I f you like)

    cut up 4 or 5 med to large red potatoes in small chunks for roasting. spread out on baking sheet and season with salt, pepper, rosemary, tyme, Mrs Dash or similar spices. roast under 350 degree oven until cooked through and soft.

    In a mixing bowl mix potatoes and cream cheese( I just eybeall this and try to make it close to 50/50 mixture. I like to add crumbled up fried bacon and possibly crambled eggs and some chopped chives or onions.

    generously stuff the chili's with the mixture and top with shredded cheese.( I enjoy the pre packaged Pizza or taco blend but would like to try next with a smoked gouda.

    set stuffed chili'spright with cheese facing up in a pan or casorole dish and place under oven broiler at full with oven door ajar to keep an eye out for burning. When the cheese starts to bubble they are done.
