Salmon is one of those fish that many people find too fishy, so they will either make patties or smoke them or whatever to make them more palatible. I'm not sure I have ever had smoked salmon, but have had some pretty good patties. Since I love to cook and eat fish I have done some experimenting (sp?) with a simple yet tasty way to do salmon fillets. The nice thing about it is that it is equally delicious whether you plan to cook it on the grill ( I use one of those fish basket things ), or in the oven broiled, or pan fried in a little extra virgin olive oil. If pan frying you'll want to use medium heat as olive oil will smoke up the place quick if it gets too hot. I hope you will try it.
salmon fillet ( I prefer the skin removed )
red wine vinegar
lemon pepper seasoning
garlic powder or the real stuff
1 lemon
brown sugar
Now I am the kind of cook that does not adhere to strict measurements of ingredients so you can play around with this to suit your tastes. Take the thawed salmon fillet and splash on the red wine vinegar. I like to quarter the lemon and use half of it to put on the fillet before cooking and use the other half for eating. After dousing it with the red wine vinegar and lemon, sprinkle on the other seasonings. Turn fillet over and repeat on other side. At this point I like to put it in the frig for a couple of hours to kinda marinate I guess, but it is still good if you don't have time for this. During the cooking process I put a little more lemon or red wine vinegar and crumb on the brown sugar, which will give it a carmel looking glaze. I really like the pan fry method or bbq grill method the best. |
