    you can smoke them or fix on bbq. on bbq i season with various spices and wrap in foil

    Try this simple, but great recipe for the grill. If the trout are large enough to fillet out, then do so. Trout about 12" and up will work for this. Fillet them but leave skin on. Heat the grill to medium. Take a package of dry ranch dressing and mix with enough melted butter to get a good thin, but not runny consistency. Spread across the fillets and grill for about 5 - 10 minutes, depending on thickness. You can tell by checking the flakes for doneness. Do not turn over the fillets. The meat should just slide right off the skin onto serving plates.

    Lately, I've been pan frying fillets (skin on) in a combination of olive oil and butter.  When the fish is partly to mostly done I add a generous bit of chopped almonds and toast them in the pan along with the fish.  Tastes really good putting the nuts on the fillets.  Sort of a "trout almandine", I guess.

    just do a search for trout recipe for brooks and browns i field dress and fry in butter and season with lemon pepper.
    Cabelas caries some good seasonings.
    Take a kid fishing , If the fish aint biting entertain them. Photobucket
