i love smoking fish, what are your favorite brines?

one cup salt, one cup brown sugar and one gallon spring water. Soak fish two days, rinse really well (x3) then smoke!

I'm hot smoking some Lake Michigan salmon tonight - I use a LOT of Bacardi and Coke.
For the salmon I recommend the brine recipe from the 3 men site:

I smoke in a Bradley smoker with Maple and it turns out great!

I use a cold smoke (150 - 170) for most everything. I use wild cherry, hickory, sasafras (sp) or assorted fruit woods.
