roasted potato salad

This Recipe was given to me by a coworker. I have not made it yet but it is really good and a nice change from traditional potato salads. BTW It should be served warm and does not improve with age like other potato salads do so eat up.
4 cups quartered and unpealed red potatoes.
1 cup mayonnaise
4 slices of bacon, crisp.
2 hard boiled eggs chopped. ( I think I like them sliced better)
1/4 cup sliced green onions
1/4 tsp salt ( I think I will use sea salt)
1/4 tsp black pepper
.
preheat oven to 425 degrees and place potatoes on cookie sheet sprayed with pam. cook for 30 to 35 minutes, stirring halfway through. mix up all other ingriedients and then add roasted potatoes. serve either hot or cold but does not keep well overnight. enjoy. I think it would go well with a grilled ribeye and a beer of choice.

I built my own lure company as a young man--thus the name UncleTomsJigs. It grew so well I decided to give it up and go fishing with family, friends and especially grand children. I became disabled as a United Methodist Pastor IN 2002 and retired here in Coastal Georgia on a 10 acre lake where I continue to fish despite my disabilities. My wonderful wife and I enjoy fishing together. God has blessed us in so many ways and we pray the same for you. I am excited about having so many new friends all over this great country.

well uncle Tom there is only one way to find out. Its an easy recipe so you can probably expiriment with it a bit and not have to worry about breakin the bank.
