Yellow perch are some of the best eating fish. After you fillet them, you can use the Ritz cracker recipe, the Deep fried recipe or my wife's microwave recipe (all posted in this forum) and you should have good results.
    Good luck and God bless.

OMG are they edible no they are not when you catch them send them to me asap!!!!! Seriously they are the best fish to eat there are. Filet them then I if your going to freeze them put in ziploc baggie and then fill with water then freeze this will keep them from freezer burning(works for all fish). If your going to fry them fresh then get some Zatarains fish breading mix. Put some in a bowl then throw filets in and shake them off to get excess breading off. Toss in hot grease 350° -375° fry till golden. Not sure about the spelling of zatarains but it is the best seasoning I have ever had on my filets. I even filet crappies and fry them with it. I'm picky and don't eat a lot of fish even though I fish about every day when I'm not hunting. I never liked crappy my parents pan fried them whole having to pick out the bones. Now that I filet them I like them much better. but fresh lake perch are still the best with some homemade tarter sauce.

    recipe for tarter sauce:
    Miracle whip
    lemon juice
    dill pickle relish
I never measure when making it but taste as I go along. Put about a cup of miracle whip in a bowl. Add about 2-3 tablespoons of dill relish. The some lemon juice to taste a teaspoon -one tablespoon too much and the sauce will get runny and separate. Mix well and enjoy. My friends all make me make this when we have a fish fry even though it is one of the most simple recipes there is.
