thanks for the picture link those are some great pictures getdanet posted looking at the stringer board picture all I can think of is eating, eating and eating baked lake trout on the grill LOL

Hey Jerry, Do you have a good recipe for the Lakers? Never cooked them up before and don't want to ruin them.

Fillet them, coat with flour / Old Bay combination and throw them in Crisco! OR, poach, remove meat, mix with slivered onion, mayo for binder & a little Seasonal. Make patties or round balls and roll in garlic flavored bread crumbs = fish cakes!

I think lakers make the very best fish cakes...How about it, Jerry!

Thanks for the suggestion Pete. A friend of mine suggested that I smoke a couple of the filets. He even gave me a recipe for his brine solution.

A good brine for salmonoids = 1-cup canning salt (no iodine), 1-cup regular sugar, 1-cup brown sugar and 1-gallon spring water. Keep in brine for two days, rinse real real good, let sit in the open air on a rack to dry out (it gets a glazed look to it), put in smoker and do your thing! FYI, it cures better if the skin is on!

Any time I have a large slab of fish be it salmon or trout or any fish for that matter I like to cook it as a one dish meal

Lake trout fillets (or any fish fillet)
I like to use Cut up onion, tomatoes, green and red peppers (but you can use any veggies you want or like)
Butter
Paprika, salt, and pepper ( or seasoning of your choice)
I layer the onions on the bottom in the middle of a piece of foil, then put the skinless boneless fillet on top the onions and cover with remaining veggies, add a few pats of butter. Sprinkle with the
seasonings , wrap the foil up and seal edges to make a pouch , place it on grill or bake in oven at 350* about 30 to 45*minutes depending on the thickness of the fillet or until the fish flakes easily and veggies are fork tender.

you bet  I can remember you picking through all the fish (L trout) you brought to the meet  and stuffing myself with those mouth watering fish cakes we had ( if I remember right you were still eating them and the onion rings we had during the pie eatting contest ) LOL

In going through some of the posts on this thread I can see that some things never change.  I can't believe that it has been six years since I first joined you folks up there at the island.  I am going to try and make it up this year.  We will have to see how things go between now and then.

I am glad you told me that Pete.  Maybe i can get my brother to come along.  In fact one of the other guys that was with us has a boat now and he might like to be there as well.  I will bring it up to them.

**Breakfast & Dinner menu for the 2012 LC get together**

** BREAKFAST ** Will begin Thursday morning (July 26th) and run through Sunday morning (July 29th) at or around 9:00 am each day at (site #29)

Breakfast menu : ( buttermilk pancakes ,French toast, scrambled eggs, ham, bacon, sausages, hash browns or fried potatoes.)

** NIGHTLY DINNERS ** Will begin Wednesday night (July 25th) and run through Friday night (July 27th) at or around 6:00 pm each night at (site # 29). Ending with our Pot Luck and Worship Service on Saturday night the (28th) at the Campground main shelter.

Dinner menu for: Wednesday night (July 25th)
Spaghetti and meat balls ,Lasagna, Antipasto salad, garlic bread

Dinner menu for: Thursday night (July 26th)
Country style ribs, baked potato , vegetable and a dinner roll.

Dinner menu for: Friday night (July 27th)
Friday night fish fry, with French fries and coleslaw plus (Debs Famous Chili)

Quick note: ( As in past years if members would like to donate part of their catch for us to cook up and share with the group at the fish fry it would be greatly appreciated.)

Dinner: Saturday night July (28th)
Is our signature ** POT LUCK NIGHT** please bring a hot or cold dishes to past and a meat of your choice to grill for the members in your family / group. We will have tables set up for your dishes and grills for you to cook on at the***Campground Main Shelter*** next to the office ..

Immediately following the Pot Luck please join us for our “Annual Worship Service with Communion (Led by Lazarus) to give "Thanks" to the "LORD" for bringing us together in fellowship on and off the water.

My last post is an update pertaining to the meals (times and menu ) that we will be offering again this year for members attending the meet.
