    one cup salt, one cup brown sugar and one gallon spring water. Soak fish two days, rinse really well (x3) then smoke!

    I'm hot smoking some Lake Michigan salmon tonight - I use a LOT of Bacardi and Coke.

    For the salmon I recommend the brine recipe from the 3 men site: http://www.3men.com/threemen1.htm

    I smoke in a Bradley smoker with Maple and it turns out great!

    I use a cold smoke (150 - 170) for most everything. I use wild cherry, hickory, sasafras (sp) or assorted fruit woods.

    Any suggestions other than those already posted for trout? I read something recently about someone who does it but without any details. I'm thinking about trying it and would probably use apple and a cold smoke technique.
