1 cup buttermilk pancake mix
1 can beer, if desired to create beer batter
1/2 cup flaked coconut, finely chopped
2 lbs. halibut, cut into 11/2-inch pieces
Canola oil

Prepare buttermilk pancake mix according to package directions (if desired, use beer to create beer batter); stir in flaked coconut. Dip fish into buttermilk and pancake batter mix. In large frying pan, heat oil over medium heat until hot. Add fish; cook 3 to 4 minutes on each side or until golden brown and fish flakes easily with a fork. Serve with your favorite side dish and tartar sauce, if desired.

4 to 6 servings.
