1 small shallot, peeled and chopped
1 jalapeño pepper, cored, seeded and minced
4 oz. smoked salmon
6 cherry tomatoes
1 T. minced, fresh cilantro
1/4 tsp. pepper
2 T. lemon juice
1 small avocado, halved and pitted
In large bowl mix shallot, jalapeño, salmon, tomatoes, cilantro, pepper and lemon juice. Stir gently, but mix well. Spoon half of mixture in each avocado half.
