2 lbs. fish

1 1/2 tsp. salt

1/4 tsp. turmeric

1/2 tsp. garlic powder

2 tsp. lemon juice

1 large onion, chopped

3 T. cooking oil

1 tsp. ginger

1/4 tsp. cayenne pepper

1 tsp. curry powder

1 can tomato sauce

2 cups water

 

Cut fish into 2-inch pieces. Mix 1 teaspoon salt with 1/8 teaspoon turmeric and 1/4 teaspoon garlic powder. Lightly rub salt mixture on all fish pieces, sprinkle with lemon juice and set aside for 30 minutes. Sauté onion in oil until golden brown. Add rest of turmeric and garlic powder, along with ginger, cayenne pepper and curry. Stir for 30 seconds; add tomato sauce. Cover pan and cook over low heat for 7 minutes, stirring occasionally. Add water and remaining salt. Bring to a boil, add fish pieces, cover and simmer over low heat until done. Serve with cooked rice.
