Seasoning of choice: paprika, turmeric, seasoned salt, white pepper, lemon pepper, Cajun seasoning, etc.
Sprinkle lemon juice over fillets. Weave fillets on skewers in “s” shaped pattern. Sprinkle fillets with choice of seasonings. Place skewers under hot broiler or on grill. Cook until flaky.
