6-8 weakfish fillets 
3-4 egg whites 
1 cup cornstarch 
2 T. dry mustard 
1 jar mild green chile peppers, minced  1 pkg.
rice pilaf
2 ripe tomatoes, cubed 
1 avocado, cubed 
Fresh basil leaves

Dip fillets into eggs. Combine cornstarch and mustard; coat both sides of fillets. Place fillets on foil lightly sprayed with nonstick spray. Spread 1 teaspoon chiles over each piece of fish. Bake 350 degrees for 25 minutes. Prepare rice. Place rice on serving platter; add fish on top of rice. Garnish with tomatoes, avocado and basil leaves.
