1 cup cornmeal
1 cup seasoned flour
2 eggs
1/4 cup beer
Oil
1/2 cup milk
2 cups black bean and corn salsa
1 cup grated cheese (colby jack or cheddar)

Heat oil in cast-iron skillet. Mix dry ingredients. Beat eggs and beer together. Add to dry ingredients; mix well. Add up to 1/2 cup milk, in order to make consistency of pancake batter. Add salsa and grated cheese. Thin with milk if necessary. Drop by tablespoon into hot oil; cook until brown. Turn if necessary. Remove to paper bag or wire rack to drain. You can add fish or meat pieces to batter, and fritters make a complete meal.
