3 T. cooking oil
2 cups self-rising white or yellow cornmeal
1/2 tsp. salt
1 T. sugar
11/2 cups milk
2 eggs, room temperature and lightly beaten
6 (or more) jalapeños, fresh or pickled, seeded and chopped
Preheat oven to 400°F. Pour oil into cast-iron skillet or cornstick mold; place in oven. Mix cornmeal, salt and sugar. Combine with milk, eggs and jalapeños. Pour batter into hot pan; bake for 20 minutes.
