2 tablespoons fresh lime juice
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper
1/4 teaspoon salt
2 tablespoons olive oil
2 slices (about 1-inch-thick) red, seedless watermelon
2 slices (about 1-inch-thick) yellow, seedless watermelon (or 2 additional slices red, seedless watermelon)
1/4 cup fresh cilantro, torn
In small bowl, combine lime juice, cumin, crushed red pepper and salt. Whisk in olive oil.
Using sharp knife, trim rind from watermelon slices. Cut slices into 1-inch-wide strips.
Arrange watermelon strips decoratively on each of 4 salad plates. Drizzle generously with dressing. Sprinkle with cilantro.
